Halibut Sandwiches with Tartar Sauce
Need From preparation to the plate, this recipe takes approximately 45 minutes.
Instructions
Combine first 4 ingredients in a small bowl, stirring well.
Sprinkle fish fillets evenly with salt and freshly ground black pepper.
Heat a large nonstick grill pan over medium-high heat. Coat the pan with cooking spray.
Add fish fillets to the pan; saut 4 minutes on each side or until fish flakes easily when tested with a fork or until desired degree of doneness.
Spread 1 tablespoon mayonnaise mixture over the cut side of each bun half. Line bottom half of each bun with 1 romaine lettuce leaf half and 1 tomato slice. Top each serving with 1 fillet.
Place top halves of buns on sandwiches.
Recommended wine: Pinot Grigio, Gruener Veltliner, Pinot Noir
Pinot Grigio, Gruener Veltliner, and Pinot Noir are my top picks for Halibut. Fish is as diverse as wine, so it's hard to pick wines that go with every fish. A crisp white wine, such as a pinot grigio or Grüner Veltliner, will suit any delicately flavored white fish. Meaty, strongly flavored fish such as salmon and tuna can even handle a light red wine, such as a pinot noir. You could try Skyfall Pinot Gris. Reviewers quite like it with a 4.8 out of 5 star rating and a price of about 13 dollars per bottle.

Skyfall Pinot Gris
Pale straw in color with notes of mango, citrus blossom and banana in the nose. On the palate a medley of tropical fruit unfolds into tangerine, mango, grapefruit, and banana flavors. These tropical notes continue throughout the long and lingering finish.
