Instructions
Sprinkle 1/4 teaspoon salt over fish.
Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray.
Add fish to pan; cook 4 minutes on each side or until fish flakes easily when tested with a fork or until desired degree of doneness.
Place the coconut on a baking sheet; broil for 2 minutes or until toasted, stirring occasionally.
Combine remaining 1/4 teaspoon salt, cilantro, and next 5 ingredients (through jalapeo) in a food processor; process until finely chopped. Spoon 2 tablespoons cilantro mixture over each fillet; sprinkle each serving with 1 1/2 teaspoons coconut.
Garnish with lemon wedges, if desired.
Recommended wine: Pinot Grigio, Gruener Veltliner, Pinot Noir
Fish on the menu? Try pairing with Pinot Grigio, Gruener Veltliner, and Pinot Noir. Fish is as diverse as wine, so it's hard to pick wines that go with every fish. A crisp white wine, such as a pinot grigio or Grüner Veltliner, will suit any delicately flavored white fish. Meaty, strongly flavored fish such as salmon and tuna can even handle a light red wine, such as a pinot noir. The Chehalem 3 Vineyard Pinot Gris with a 4.4 out of 5 star rating seems like a good match. It costs about 26 dollars per bottle.
