Stir boiling water into dry gelatin mix in large bowl at least 2 min. until completely dissolved. Stir in cold water. Refrigerate 1 hour or until slightly thickened (consistency of unbeaten egg whites). Gently stir in applesauce.
Pour into 4-1/2-cup ring mold sprayed with cooking spray.
Refrigerate 4 hours or until firm. Meanwhile, mix apples, marshmallows, celery, walnuts and dressing. Refrigerate until ready to serve.
Unmold gelatin onto serving plate; surround with lettuce. Fill center with apple mixture. Store leftover gelatin mold in refrigerator.
