Tilapia With Caper-parsley Sauce
Tilapi Head to the store and pick up butter, tilapia fillets, new potatoes, and a few other things to make it today. From preparation to the plate, this recipe takes roughly 47 minutes.
Instructions
Heat oven to 450 F. On a rimmed baking sheet, toss the potatoes with the oil, teaspoon salt, and teaspoon pepper. Roast, tossing once, until tender, 30 to 35 minutes.Meanwhile, season the tilapia with teaspoon salt and teaspoon pepper.
Heat 1 tablespoons of the butter in a large nonstick skillet over medium-high heat. Cook the tilapia in batches until cooked through, 2 to 3 minutes per side, adding more oil to the pan if necessary.
Transfer to a plate and tent with foil to keep warm.
Add the wine to the skillet and cook over medium-high heat until reduced by half, 2 to 3 minutes.
Remove from heat and whisk in the remaining 3 tablespoons of butter, plus the capers and parsley.
Serve with the tilapia and potatoes.
Recommended wine: Pinot Grigio, Gruener Veltliner, Pinot Noir, Sparkling Wine
Pinot Grigio, Gruener Veltliner, and Pinot Noir are my top picks for Tilapia. Fish is as diverse as wine, so it's hard to pick wines that go with every fish. A crisp white wine, such as a pinot grigio or Grüner Veltliner, will suit any delicately flavored white fish. Meaty, strongly flavored fish such as salmon and tuna can even handle a light red wine, such as a pinot noir. One wine you could try is Ziobaffan Organic Pinot Grigio. It has 4.6 out of 5 stars and a bottle costs about 17 dollars.
