Instructions
In a Dutch oven, saute the onion, carrot, pepper, mushrooms and zucchini in oil until tender.
Add garlic; cook 1 minute longer.
Add the tomatoes, beans, tomato sauce, green chilies and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 35 minutes, stirring occasionally.
Serve in soup bowls; garnish each with cilantro and sour cream if desired.
Recommended wine: Cava, Shiraz, Grenache
Cava, Shiraz, and Grenache are my top picks for Chili. These juicy reds don't have too much tannin (important for spicy foods), but a sparkling wine like cava can tame the heat even better. The Cava Mestres Reserva Brut 1312 with a 4.7 out of 5 star rating seems like a good match. It costs about 18 dollars per bottle.

Pale Straw yellow in color with visible green highlights and fine, elegant bubbles. A clear reflection of the vintage: delicate finesse with intense aromas of white fruit, flowers and fresh cut herbs. On the palate it is fresh, revealing a great balance of sweetness and acidity. Pleasant and easy to drink.
