One portion of this dish contains roughly 202g of protein, 68g of fat, and a total of 2340 calories. If you have kosher salt, pork tenderloins, olive oil, and a few other ingredients on hand, you can make it. To use up the ground cumin you could follow this main course with the Moroccan Chocolate Mousse as a dessert.
Instructions
Preheat the oven to 400 degrees F.
Combine the paprika, sugar, salt, cumin, mustard powder, black pepper and cayenne pepper in a bowl.
Heat a large cast-iron pan over medium-high heat, and lightly coat with canola oil. Dredge the pork tenderloin in the rub, tapping off any excess, before searing on all sides, about 3 minutes per side.
Place the pan into the oven and cook to medium doneness, 8 to 10 minutes. Promptly remove from the oven and let rest at least 15 minutes.
Serve with the Bourbon-Chipotle Sauce.
Heat the olive oil in a medium saucepan over medium-high heat. Cook the onions until soft, and then pour in 2 cups of the bourbon and cook until reduced to a few tablespoons. Stir in the chicken stock, apple juice, brown sugar, peppercorns and chipotle, and cook until reduced by half.
Strain through a fine mesh strainer, and then return to the pan and cook until it becomes the consistency of a sauce.
Add the remaining 2 tablespoons bourbon and cook 2 minutes. Season with salt.
Recommended wine: Malbec, Pinot Noir, Sangiovese
Pork Tenderloin on the menu? Try pairing with Malbec, Pinot Noir, and Sangiovese. Pinot noir's light body is great for lean cuts, medium bodied sangiovese complement meaty sauces, stews, and other multi-ingredient dishes, and full-bodied tannic malbec pairs with fatty cuts and barbecue. You could try Reginato Malbec rosé. Reviewers quite like it with a 4.8 out of 5 star rating and a price of about 17 dollars per bottle.

Reginato Malbec Rose
Malbec seems an unlikely hero for a sparkling wine grape, but when you want your rosé to show some real color and character, then Malbec's your man. Crisp and dry with lovely strawberry, rhubarb flavors and aromas. Just a hint of tannin structure, floral spice, and an amazing elegant finish rounds out the mouth. It speaks of the rich Malbec grape, but never loses its light, refreshing nature. It will give you a good reason to drink sparkling wine with your main course!
