Ingredients1/2 pound cod or tilapia fillets, cut into chunks1 3 oz. can smoked oysters4 cups vegetable stock2 cups filtered water1 14 oz. can diced tomatoes1 celery stalk, chopped1 onion, peeled and chopped4 garlic cloves, peeled and chopped4 medium red potatoes, cut into chunks1/2 teaspoon chili flakes1 bay leaf2 tablespoons olive oil2 tablespoons parsley, choppedsalt and pepper
In a heavy-bottomed pan, heat the olive oil over medium heat.
Add the onion and celery and saute until softened, about 5 minutes.
Add the garlic and chili flakes and saute for another minute.
Add the stock, water, tomatoes, potatoes and bay leaf and bring to a simmer. Cover and cook for 20 minutes, or until the potatoes are tender. Next, add the fish, oysters and parsley and simmer for another 5 minutes, or until the fish flakes. Season to taste with salt and pepper.
