Instructions
Sprinkle steaks with pepper. In a large skillet, cook steaks in oil over medium heat for 4-6 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 145°; medium, 160°; well-done, 170°).
Remove to a baking sheet and keep warm.
Reduce heat to low; add the shallots, Cognac and peppercorns, stirring to loosen browned bits from pan. Stir in wine and broth. Bring to a boil over medium heat; cook until liquid is reduced to 1/2 cup.
Top steaks with cheese. Broil 6 in. from the heat for 2-3 minutes or until cheese is softened.
Serve sauce mixture with steaks.
Recommended wine: Pinot Noir, Merlot, Cabernet Sauvignon, Malbec, Sangiovese
Tenderloin Steak works really well with Pinot Noir, Merlot, and Cabernet Sauvignon. Beef and red wine are a classic combination. Generally, leaner cuts of beef go well with light or medium-bodied reds, such as pinot noir or merlot, while fattier cuts can handle a bold red, such as cabernet sauvingnon. The Archery Summit Arcus Pinot Noir with a 5 out of 5 star rating seems like a good match. It costs about 59 dollars per bottle.

Archery Summit Arcus Pinot Noir
This bright red Pinot Noir boasts deep aromatics of rose petals, carnations, ripe raspberries, spice, minerals and sweet oak. Concentrated fruit flavors integrate with fine tannins and balanced acid that lead to a lush mid-palate with a very long and elegant finish. Profound, complex, and subtle, the Arcus will drink beautifully and improve over the next ten years.
