Instructions
Prepare a charcoal or gas grill for high heat (450 to 550; you can hold your hand 5 in. above cooking grate only 2 to 4 seconds). In a large resealable plastic bag, combine garlic, mint, lemon zest, 1/4 cup olive oil, and 1 tsp. each salt and pepper.
Add lamb chops and mix to coat.
Grill tomato, onion, and bell peppers, turning twice, until soft and blackened, 6 minutes.
