Instructions
Mix the bread crumbs, parsley, and smoked paprika well into a bowl and season with salt and pepper.
Spread the flour in another bowl.
Whisk the eggs and 2 tbsp water in another bowl.
Slice the fish into strips about in (1cm) wide. In batches, coat the fish in the flour. Dip in the egg, then coat with the bread crumbs.
Spread them, without touching each other, on a baking sheet.
Add enough oil to come 1 in (2.5cm) up the sides of a large, deep saucepan and heat over high heat to 350F (180C). In batches, add the fish and deep-fry, turning once, about 2 minutes, until golden. Using a slotted spoon, transfer to paper towels to drain.
Transfer to a platter and garnish with the parsley.
Serve hot, with the lemon wedges.

Recommended wine: Pinot Grigio, Gruener Veltliner, Pinot Noir
Pinot Grigio, Gruener Veltliner, and Pinot Noir are my top picks for Fish. Fish is as diverse as wine, so it's hard to pick wines that go with every fish. A crisp white wine, such as a pinot grigio or Grüner Veltliner, will suit any delicately flavored white fish. Meaty, strongly flavored fish such as salmon and tuna can even handle a light red wine, such as a pinot noir. The FitVine Wine Pinot Grigio with a 4.4 out of 5 star rating seems like a good match. It costs about 18 dollars per bottle.

FitVine Wine Pinot Grigio
This slightly dry white wine is clear in color. It's clean, crisp, great tasting with floral notes on the nose and flavors of green apple and a hint of citrus. Finish is fresh.Enjoy tonight without sacrificing tomorrow.
