Instructions
In a medium bowl, whisk together flour, baking soda, and salt. Set aside. In the bowl of a stand mixer fitted with a paddle attachment, cream together butter, sugar, and confectioners sugar, about 3 minutes.
Add egg and vanilla and beat to combine. Beat in canola oil.
Add flour mixture and mix just until incorporated. Dough will be soft. Wrap in plastic wrap and refrigerate for 1 hour.
Adjust oven rack to upper and lower middle positions and preheat oven to 350°F. Line two baking sheets with parchment paper.
