The recipe Coconut Baked Shrimp with Pineapple Peach Salsa could satisfy your Mexican craving in around 45 minutes. Watching your figure? This dairy free recipe has 1242 calories, 79g of protein, and 79g of fat per serving. This recipe serves 2. It works well as a main course. If you have salt, drooling, garlic, and a few other ingredients on hand, you can make it. To use up the lite coconut milk you could follow this main course with the Cranberry Coconut Trifle as a dessert.
Instructions
Preheat oven to 425 degrees F. Spray an 88 baking dish with non-stick spray. If desired, slice shrimp down the middle to butterfly. I did this because I like how it appears to make the shrimp larger.Toss shrimp with salt and pepper, then lay in the baking dish. In a bowl, combine coconut milk, olive oil, garlic and tarragon.
Pour over shrimp in the baking dish. In another bowl, mix bread crumbs and coconut.
Bake for 20 minutes, or until bread crumbs are golden brown.
Serve shrimp and spoon a bit of the coconut milk mixture over top. Top with salsa.Note: if you are not a fan of coconut (especially the texture), you can leave it out and up the quantity of the panko bread crumbs. The coconut milk itself does not have a strong coconut flavor.Pineapple Peach Salsa1/4 cup chopped pineapple (about 4 large chunks)1/3 cup chopped peaches (I used 2 white peaches)1/4 cup chopped tomatoes1 tablespoon chopped tarragon2 tablespoons chopped cilantro1/4 teaspoon salt1/4 teaspoon pepperjuice of half a lemon
Combine all ingredients in a bowl, spritz with lemon and toss to mix. Will stay fresh for 2-3 days in the fridge! Now this is a happy ending.posted in Recipes, Seafood140 comments
Recommended wine: Pinot Grigio, Riesling, Sauvignon Blanc
Pinot Grigio, Riesling, and Sauvignon Blanc are my top picks for Shrimp. These crisp white wines work well with shrimp prepared in a variety of ways, whether grilled, fried, or in garlic sauce. You could try Maysaran Arsheen Pinot Gris. Reviewers quite like it with a 4.5 out of 5 star rating and a price of about 18 dollars per bottle.

Maysara Arsheen Pinot Gris
A bright expression of fruit right up front, greeting your palate with notes of cut grass on a warm day. The wine is anchored by crisp acidity, but not so much as to overpower a fleeting tease of sweetness that leaves you smiling. Arsheen has a smart, refreshing character that will bestow clarity to a range of preparations of fish, fowl, and pork.
