Instructions
In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg and vanilla.
Combine the flour, cinnamon, baking powder, baking soda and salt; stir half into the creamed mixture. Stir in the apple, walnuts if desired and remaining flour mixture.
Drop by heaping teaspoonfuls 3 in. apart onto lightly greased baking sheets.
Bake at 375° for 13-15 minutes or until golden brown.
Remove to wire racks to cool.
