Instructions
Preheat oven to 350 degrees F.
Season each fillet to taste with salt and pepper.
Combine the potato and horseradish and spread the mixture over the top of each fillet, pressing it down so it will adhere.
Heat the oil in a large saute pan over medium heat until almost smoking. Sear each fillet potato-side down until a crust forms, about 3 minutes. Turn the fillets over and finish cooking in the oven until done, about 5 minutes for medium.
Place on a large serving platter and top each fillet with some relish.
Serve any remaining relish on the side.
In a mixing bowl, combine the bell peppers, olives, pepper flakes, garlic, thyme, parsley, vinegar, honey, and oil. Season to taste with salt and pepper. May be refrigerated up to 1 day.
Serve at room temperature.
Recommended wine: Pinot Noir, Pinot Grigio, Gruener Veltliner
Pinot Noir, Pinot Grigio, and Gruener Veltliner are my top picks for Red Snapper. Fish is as diverse as wine, so it's hard to pick wines that go with every fish. A crisp white wine, such as a pinot grigio or Grüner Veltliner, will suit any delicately flavored white fish. Meaty, strongly flavored fish such as salmon and tuna can even handle a light red wine, such as a pinot noir. The Tudor Wines Tondre Reserve Santa Lucia Highland Pinot Noir with a 5 out of 5 star rating seems like a good match. It costs about 75 dollars per bottle.

Earthy in a pleasant way - the fruit character is closer to plum than cherries. The mouth is sweet and delicious with hints of cola and baking bread.
