Jerk Pork Tenderloin with Fresh Pineapple Chutney
Need If you have cider vinegar, pork tenderloin, olive oil, and a few other ingredients on hand, you can make it. To use up the pineapple you could follow this main course with the Pineapple Cupcakes as a dessert.
Instructions
To prepare pork, heat oil in a large ovenproof skillet over medium-high heat. Rub pork with 2 teaspoons Easy Jerk Seasoning.
Add pork to pan; cook 3 minutes, turning to brown all sides.
Place pan in oven; bake at 425 for 25 minutes or until a thermometer registers 160 (slightly pink).
Let stand for 10 minutes before slicing.
To prepare chutney, heat a medium saucepan over medium-high heat. Coat pan with cooking spray.
Add onion; cook 5 minutes or until lightly browned.
Add pineapple and remaining ingredients. Cover, reduce heat, and simmer 15 minutes or until thickened, stirring occasionally.
