Caramelised Red Onion, Feta and Bacon tart

Preheat the oven to 220c/200fan.Step 2: In a pan fry the onion with a little oil until soft, turn up the heat and add the balsamic vinegar, sugar, thyme, salt, pepper and bacon, fry for 5 minutes and set aside to cool.Step 3: Unroll the pastry sheet and score a line 1cm in from the edge around the sides. Prick the base with a fork.Step 4: Spoon the cooled onion and bacon mixture over the base, keeping within the scored line, then top with the feta.
Bake in the oven for 15 minutes. I sprinkled over a few torn basil leaves at the end to add some colour.
