Instructions
Preheat the oven to 375 degrees F.
Place all the vegetables and garlic in a bowl.
Add the oil, agave and salt.Toss to coat.
Spread the vegetables evenly on to a baking sheet or a large, shallow baking dish. Do not pile the vegetables too high. If needed, use two baking sheets.Roast the vegetables for 20 minutes.Check to see if the vegetables are tender and becoming golden. If not, stir and return to the oven for another 10 minutes.
